How to make thick Mordovian pancakes on semolina? Prepare your food. Milk is suitable for any fat content, eggs — choice or first category, if they are small, then take one more. Remove the eggs from the refrigerator ahead of time to keep them warm. If you didn’t have time to do this, then keep the eggs in warm water for 10-15 minutes. Pour semolina into a bowl for dough, add dry yeast there. Stir and pour warm milk over the dry mixture. It is important that the milk is pleasantly warm and not hot, so that it does not burn the yeast, but activates it. Mix semolina with milk with a whisk, cover the bowl with a towel and leave to stand on the table for about 30 minutes. Heat a pancake pan over high heat. For these pancakes, it will be enough to grease it with butter just before the first one. Place about two ladles of dough on a well-heated frying pan and spread it over the entire surface. Fry the pancake covered over medium heat.

When the bottom side is browned and the top is dry, turn the pancake over to the other side. Fry it also covered. Remove the finished pancake to a plate. You can grease it with butter. Fry pancakes using all the dough in this way. I got 6 pancakes, a frying pan with a diameter of 18 cm.
