If you have frozen spinach, you need to give it time to thaw. If it’s fresh (like mine), you need to rinse it well under running water, tear off the excess stems and blanch in boiling water for 15 seconds, then squeeze well.

Now the grinding. If you want, you can use an immersion blender to chop the spinach. If you have a stationary blender, that’s also very good. We need to chop the leaves well. Place spinach and eggs in a blender bowl and blend well.

Add sugar, milk and flour and beat everything well again. Add flour gradually, in small portions, focusing on the desired consistency of the dough. Keep in mind that you may need a little more or less flour.

Check the consistency of the dough — it should be liquid, like thin pancakes.

Add vegetable oil, mix and leave the dough for 10-15 minutes — so that the gluten in the flour swells.

Start frying pancakes. Heat the frying pan well, before frying the first pancake, grease it with vegetable oil (later it is not necessary, since we have oil in the dough), pour in a ladle of dough and quickly distribute the dough in a circle in a circle. Bake the pancake over medium heat.
