How to make pancakes from rice flour? Prepare the ingredients according to the list. If you don’t have special rice flour, you can make it yourself from washed and dried rice using a coffee grinder. You can take milk of any fat content. Wash the eggs and dry with napkins.

Beat eggs into a bowl, add sugar and salt, beat with a mixer or whisk until foam appears. Adjust the amount of sugar to your taste, but keep in mind that the more sugar in the dough, the more likely the pancakes will burn. Pour milk and vegetable oil into the egg mixture. Beat the mixture again with a mixer until the ingredients are mixed and combined.

Pour rice flour into the egg-milk mixture in parts, add a small pinch of vanillin if desired (be sure to read the dosage instructions), mixing the dough well with a whisk or mixer. The dough should have a consistency almost like regular pancakes made from wheat flour, only a little thicker. If it becomes like this even though there is still flour left, do not add more. Or add as needed. In any case, be guided by consistency.

Let the dough rest for 10-15 minutes (the flour must swell, otherwise the pancakes will tear). Choose a high-quality frying pan, not necessarily expensive, but with an ideal coating. Heat oil on it. Depending on the pan, you only need oil to fry the first pancake because the vegetable oil has been added to the batter and the pancakes will not stick to the pan, or if the coating requires it, lightly grease the pan before each pancake.

Fry the pancakes over medium heat until golden brown on both sides.
