How to make pancakes with red caviar? Prepare the necessary ingredients. Sift the flour in advance so that it is saturated with oxygen. Thanks to this, the finished pancakes will turn out more tender. In a bowl, mix the dry ingredients: sifted flour, sugar and salt.

Beat the eggs into a bowl, pour in the milk and beat the mixture thoroughly with a mixer. You can use an immersion blender attachment. This way the dough will be even better enriched with oxygen, and the resulting pancakes will turn out more delicate.

Add sunflower oil to the dough and mix the dough again with a mixer. Oil is necessary so that the pancakes do not burn and are easier to remove from the pan. Leave the dough to rest for 10-15 minutes. During this time, gluten will develop in the flour, and the pancakes will not tear when turned over. If necessary, you can adjust the thickness of the dough by adding a little flour.

Heat the frying pan well over high heat and grease it with a small amount of sunflower oil. You don’t have to grease the pan at all if you are one hundred percent sure of its non-stick properties.

Reduce heat to medium. Pour a small ladle of batter into the pan. I use a ladle from a multicooker. Using a circular motion, smooth out the layer of dough, forming an even pancake. Fry the pancake for about a minute.

Turn the pancake over to the other side and fry for about half a minute until browned. Remove the pancake from the pan and transfer to a plate. In the same way, fry pancakes from all the dough. If necessary, grease the pan with vegetable oil.

After the pancakes have cooled a little, you can start making the filling. To do this, place the desired amount of caviar in the center of each pancake. I put in a heaped teaspoon.
