Eggs 1 pc
Cereals 3 tbsp
Kefir 30 ml
Baking powder 0.3 tsp

For filling:

Cottage cheese 50 g
Apricots 2 pc
Honey 1 tsp

Prepare ingredients for making oatmeal pancakes. It’s better to cook the flakes for a long time, they have more benefits. I offer a sweet version of the filling — with cottage cheese, honey and fruit.

Grind the flakes to flour. The most convenient way to do this is with a coffee grinder. But you can use other kitchen gadgets — a blender or chopper. You don’t have to grind the flakes, just leave them as is, then the structure of the pancake will be a little different, more crunchy. I usually make it with whole flakes, but this time I decided to try the option with flour. It’s delicious either way, decide for yourself.

Break the egg into a bowl and beat it lightly with a fork. Add crushed flakes, kefir and baking powder. Mix everything until smooth. I would recommend adding a little extra salt, especially if the filling is sweet. A fresh pancake is good for a salty filling. If you are using whole flakes, leave the dough to rest for about 20 minutes. The flakes will swell and the pancake will turn out tastier.

Heat the frying pan. It is more convenient to fry the pancake in a non-stick frying pan, then you won’t need a drop of oil. If you have a regular frying pan, grease it with a small amount of vegetable oil. Pour the dough into the pan. Flatten it using a spatula. Make the fire small.

Fry the pancake on one side, then turn it over to the other. Since the pancake contains only oatmeal, it is very brittle. Be careful when turning over. But even if the pancake breaks, it will not affect its taste in any way.

Remove the finished pancake to a plate. Place the filling on one side. I have this cottage cheese.
