Baked Mozzarella-Stuffed Chicken with Tomatoes

Delicious chicken pockets with aromatic filling! The chicken turned out very tasty. It is very easy and simple to prepare. It’s very tasty when it’s hot, when the cheese pleasantly stretches like strings, but when it’s cooled, it’s also very good :) Paired with fluffy mashed potatoes, these pockets can be safely served at the holiday table. Ingredients (4 portions)

Basic:

Garlic 2 clove
Tomatoes (total weight about 150 g) 3 pc
Olive oil 3 tbsp
Salt to taste
Mozzarella 80 g
Ground hot pepper to taste
Parsley (or other greens to taste) 20 g
Chicken fillet 500 g

Finely chop the garlic and fry in vegetable oil for 1 minute.

Peel the tomato (this is not necessary), remove the seeds and cut into slices.

Add tomatoes to garlic and fry for 3-5 minutes. Important! The tomatoes should not lose their shape. While frying, add a little salt and ground pepper.

Chop the greens and add to the tomatoes. Stir, remove the mixture from the heat and leave to cool slightly.

We make cuts in the chicken fillet lengthwise, without cutting through the fillet all the way, to create a pocket that can be filled with filling. Salt and pepper the fillet on both sides.

Cut the mozzarella into slices or circles. I used block mozzarella because I didn’t have any on hand in balls, but if you can find it in balls, it’s better to use it. Place a few slices of mozzarella in each pocket.

Place the tomato filling on the mozzarella.

Using skewers, we fix the edges of the fillet so that the filling does not “run away” during cooking.

In a hot frying pan, fry the fillet on both sides until golden brown.

Place the fillet in a baking dish and place in an oven preheated to 200 C.

Bake for 20 minutes, turn off the heat and leave in the oven for another 5 minutes. We take our “pockets” out of the oven and are ready to serve. Bon appetit!
