Sweet & Sour Pineapple Chicken Delight

A very tasty dish with an unusual presentation for lovers of Asian cuisine. This is not a 100% Chinese recipe, but rather my thoughts "based on it", but the result is very tasty. The dish is prepared quickly, if you like Asian cuisine, you will definitely like it. And if you present it beautifully, the mantle of “queen of the kitchen” will be yours :))))

Ingredients (2 portions)

Basic:

Salt 0.5 tsp
Sugar 1 tbsp
Ginger bunch
Corn starch (can be replaced with potato) 2 tbsp
Carrot (medium size) 1 pc
Vegetable oil 3 tbsp
bell pepper 1 pc
Ketchup 1 tbsp
Chicken fillet (any meat: breast, thighs) 300 g
Pineapples (half a large one or 2 small ones) 1 pc
Soy sauce 4 tsp
Lime juice 1 tbsp

Recipe instructions

cut the meat into small pieces

add salt, add soy sauce and marinate for 40 minutes

cut the carrots into thick quarters, blanch in boiling water for 2-3 minutes, drain in a colander

cut the pineapple in half, remove the pulp

finely chop the flesh of half a pineapple

cut the bell pepper into 1x1 cm cubes

cut 3 ginger rings (from the thick part) and cut into strips

Roll the meat in starch and fry until cooked. Itʼs better to cook in a wok

Place the finished meat on a napkin to remove excess oil

fry ginger in hot oil for 1-2 minutes

add blanched carrots to the ginger, fry for 2 minutes, then pepper, fry for 2 minutes, then pineapple

salt, add sugar, add ketchup. the sauce should thicken slightly (ketchups usually contain starch)

Place the meat in the sauce, stir and turn off the heat. let it sit and soak

Place the finished meat and vegetables into empty pineapple halves and serve with hash (you can also eat it with forks)
