How to make fricassee with chicken and mushrooms? At home, this dish is prepared from chicken fillet and champignons. However, every French restaurant chef has his own special recipe for this dish. Therefore, you can safely prepare it with your own changes. Wash the chicken fillet, dry it with a paper towel and cut into cubes or strips.

You can use mushrooms for the dish in the same way as in the classic recipe, champignons, but if it is possible to add forest mushrooms, then this should definitely be done. The dish will acquire an amazing aroma and taste. You can use any mushrooms you like; it turns out delicious with saffron milk caps. If the mushrooms are fresh, then wash them thoroughly, cut the large caps into cubes or strips, boil in salted water for 20 minutes, drain the water, and wash the mushrooms again.

Peel the onions and cut them into cubes. Pour olive oil into the pan, you can use vegetable oil. Heat it up and fry the onion until transparent.

Add boiled mushrooms to it, mix and fry them together over medium heat for another 10 minutes.

Then add the cooked chicken to the frying pan with the mushrooms. Stir and fry until the chicken meat is white. Add spices: salt and ground black pepper, you can add any other seasoning if desired. Keep the chicken and mushrooms on the fire for another 10 minutes.

Pour cream into the pan with chicken and mushrooms and stir. Reduce the heat to low, cover the pan with a lid and simmer for about 10 minutes. In a glass of cold water, stir a tablespoon of flour until a homogeneous mixture is obtained. Pour it into the pan and stir. Turn off the heat and let the dish stand covered for 15 minutes. Those who like similar dishes with a more piquant taste can add a clove of garlic passed through a press at this stage.

The dish is ready. Serve it at the table, with a side dish or as an independent dish, sprinkled with grated hard cheese and fresh chopped herbs on top if desired. Bon appetit!
