Ingredients (4 portions)

Basic:

Garlic 12 clove
Salt (I also added Svan salt. but thatʼs to taste.) 2 tsp
Butter 3 tbsp
Water 0.66 cup
Pepper 2 tsp
Chicken (chicken, preferably homemade) 1 pc

Cut the chicken along the breastbone line and flatten it so that it fits entirely into a large frying pan. Spice up.

Melt the butter in a frying pan, place the chicken, back up, and fry over fairly high heat, pressing until golden brown, 5-7 minutes.

Turn the chicken over to the other side and cover with a heavy lid or weight to keep the chicken flattened, reduce heat and cook for 5 to 7 minutes, turning a couple of times during the process. The readiness of the bird can be determined by pricking it with a knife in the thickest place: if clear juice flows out, the chicken is ready, but if it’s pink, turn it over and fry for another 10 minutes.

Place the peeled garlic in a mortar, add salt and grind into a paste. You can use a blender.

Add 2/3 cup of water to a mortar and pour garlic sauce over our chicken.

Cover with a lid and cook over medium heat for 10-12 minutes. Cooking times are approximate and will depend on the size of the carcass and the utensils you use to cook.
