How to make classic dumplings with cottage cheese? First, prepare all the necessary products for the test. It may take more or less flour than what is written in the recipe. You will look at the test. The water needs to be heated. Sift the flour first to saturate it with oxygen. This will make the dough more tender. Take a bowl and pour warm water into it. The water should be noticeably warm, so the dough will knead faster. Beat the egg, add salt. Using a fork, whisk the water and egg until smooth.

Start adding flour one glass at a time, stirring the dough after each portion. First stir with a fork, then, when the dough begins to thicken, with your hand.

Add the third glass in small portions. The dough should come together but still be soft. It is important at this stage not to add flour, so as not to clog it, otherwise you may end up with a hard and tasteless dough. Knead the dough for a long time, it should absorb all the flour and stop sticking to your hands.

At the very end, place the dough on the board. It will become absolutely smooth and non-sticky. Gather the dough into a ball and cover it with a towel. Leave the dough on the counter for 30 minutes. During this time, gluten will develop well in it — the dough will become very elastic and pliable.

While the dough is resting, prepare the filling. Choose tasty cottage cheese, this is the main criterion. The link at the end of the recipe will help you choose cottage cheese. Adjust the amount of sugar and salt to your taste. We love sweet curd dumplings. And there are people who cook dumplings with salted cottage cheese. I didn’t add an egg to the cottage cheese because it’s soft on its own. If your cottage cheese is a bit dry, add a yolk to it to “bind” the filling.

Place cottage cheese in a bowl. Add sugar and salt. At this stage, feel free to taste the filling, adjusting it to taste.

Mix the cottage cheese well until smooth and decide whether to add an egg to it.

Divide the rested dough into three parts. Leave two under the towel. Stretch the third part into a long sausage. Cut it into pieces. This is one of the ways to make dumplings. You can also roll out the dough into a circle, cut it into circles and mold them. With my method, all the dough will go away, without any residue.

Roll each piece into a circle. Lightly dust the board with flour; the dough will become a little sticky.

Place a spoonful of filling on the circle. Seal the edges to form a dumpling. You can leave it like this, or you can twist the edge in a curly manner — it will be both beautiful and more reliable. Make all the dumplings in the same way. Place the finished dumplings on a board dusted with flour.

How to cook dumplings? Boil water in a saucepan. There should be a lot of water so that they don’t feel crowded during cooking. Salt the water. Throw in the dumplings. Stir gently to prevent them from sticking to the bottom. The dumplings will soon float to the surface. Boil them for just a couple of minutes. Remove the dumplings with a slotted spoon to a plate and serve immediately. Dumplings are served with butter, sour cream and jam to taste. Bon appetit!
