Creamy Stroganov Liver

How to make a classic Stroganov style liver? Prepare all the necessary products. Take fresh liver, bright pink, without visible damage. It can be pork, beef or any bird liver. I use chicken liver. You can take sour cream of any fat content or replace it with heavy cream and even mayonnaise (which is less desirable). Instead of tomato paste, if it is not available, you can use ketchup.

Peel the onion and rinse. To make the onion easy to peel, soak it in cold water for half an hour before cooking — you can easily peel it. Dice the onion.

Heat 1 tablespoon of vegetable oil in a frying pan. Since we will be frying in oil, it must be refined so as not to burn in the pan. As for the oil product, it can be anything from sunflower to olive. Add chopped onion, fry for about 5-7 minutes until the onion is golden brown.

Reduce heat and add flour to the pan.

Add tomato paste.

Add sour cream and mix everything vigorously so that there are no lumps. The sauce will thicken quickly, so it makes sense to add a little water. The amount of water will depend on the thickness of sour cream and tomato paste, and the quality of flour. Bring the sauce to the consistency of thick sour cream.

Salt the sauce to taste. You can pepper it or add some other seasonings. But according to the classic recipe, there are no seasonings in the dish.

Stir the sauce and remove from heat.

Rinse the liver very well in running water, remove films and bile ducts, if any. To reduce bitterness, you can soak the liver in milk before cooking for 1-2 hours. Cut the liver into small pieces.

In another frying pan, heat the remaining oil, add the liver and fry over medium heat, turning the pieces, until the liver is cooked. The usual cooking time for the liver is about 10-15 minutes, but be careful not to dry it out.

Add the previously prepared sauce to the finished liver.
