Basic:

Garlic 2 clove
Tomatoes 200 g
Salt to taste
Cilantro, coriander 10 g
Walnuts 70 g
Tomato paste 2 tbsp
Bulb onions 1 pc
Vegetable oil 2 tbsp
bell pepper 1 pc
Hot pepper 1 g
Khmeli-suneli to taste
Basil to taste
Red beans 500 g

How to make classic red bean lobio? Prepare the necessary ingredients. It is better to use a variety of red beans with a creamy consistency; they contain a sufficient amount of starch. Rinse the beans thoroughly and soak in cold water overnight. In the morning, rinse the beans again and boil over low heat for an hour and a half. Add salt at the end of cooking. The beans should be soft, but not mushy.

Peel the onion and cut into small cubes. To prevent the onion from stinging your eyes when slicing, rinse it and the knife with cold water. Wash the bell pepper, cut out the stalk with seeds and also cut into cubes.

Wash the tomatoes and cut out the place where the stalk attaches. Scald them with boiling water to make it easier to remove the skin. Grind the pulp of peeled tomatoes in a blender until puree.

Wash the walnuts, dry them and grind them in a blender into crumbs of different sizes, small and large. Pass the garlic cloves through a press. Also finely chop half a pod of hot pepper. Wash, dry and finely chop fresh cilantro and basil.

Pour vegetable oil into a frying pan with a thick bottom and heat it well. Add onions and bell peppers to the pan first. Fry the vegetables over medium heat until soft, about 5-7 minutes, stirring occasionally with a spatula.

Next, add tomato puree and a couple of tablespoons of tomato paste to the pan. Mix everything thoroughly until the mass becomes homogeneous. Simmer the vegetables for about 7 minutes more.

After cooking, rinse the beans and add to the vegetables. Keep on fire for about 7 minutes. Add walnuts, garlic, pepper, suneli hops, herbs, and salt to the pan. You can add other spices to taste. Stir the mixture in a frying pan; use a hand masher to crush the contents of the frying pan so that some of the beans remain intact and the other turns into sauce.

Cover the pan with a lid and simmer the dish over low heat for about 20 minutes. Serve the finished red bean lobio in Georgian style, garnishing the top with a sprig of cilantro and sprinkling with chopped walnuts. Bon appetit!
