How to make classic cocoa cookies? Prepare your food. For this recipe, use natural cocoa; a drink with additives, such as Nesquik, will not work. Remove the butter from the refrigerator in advance; it should soften well. Choose high-quality, natural oil, without vegetable additives.

Take a deep bowl and sift flour into it. By doing this you will not only rid it of possible debris, but also saturate it with oxygen, which will make the cookies more fluffy. Also sift the cocoa powder, as it often clumps. Add baking powder and a pinch of salt to the cocoa flour.

Mix dry ingredients until smooth. Set the bowl with them aside for now and take care of the liquid ones.

Divide the butter in half and melt one part (115 grams) in the microwave. Or in any other convenient way. Cool it until warm.

Start beating the other part of the butter with a mixer at medium speed. When it becomes fluffy, add sugar in portions to the butter. Beat butter and sugar until smooth and creamy.

Then pour melted butter into the whipped mixture. Next, beat in the egg. Whisk everything together until smooth.

Add dry ingredients to butter mixture. Using a spoon, mix the ingredients until a homogeneous dough is obtained. It should not be liquid, but not too thick; you won’t be able to sculpt it with your hands. Thatʼs how it should be, donʼt add more flour.

Line a baking tray with baking paper. Using an ice cream scoop (or two regular spoons), scoop the dough into clumps, spaced far apart—the cookies will expand a lot during baking. I got 13 pieces. But I would advise you to make the lumps smaller, then you will get more of them. The ideal size would be the size of a walnut.

Bake the cookies in the oven, preheated to 180°C (top-bottom mode) for 20 minutes. It will remain soft with light pressure, as it should be. Do not keep the cookies in the oven for longer, remove them immediately, otherwise they will harden. After cooling, the cookies will become crumbly.
