Vanilla-Infused Cranberry Jelly

A recipe for real thick homemade jelly with sourness. Cranberry jelly with vanilla is tasty and healthy. Cooking it is quite simple and quick; we only need one fresh berry, or rather, freshly squeezed juice from it.

Basic:

Sugar 3 tsp
Water 200 ml
Vanilla to taste
Cranberry 50 g
Potato starch 2 tsp

We prepare everything we need for this recipe. The necessary ingredients are indicated in the composition and shown in the photo — there are only four of them. If you don’t know yet, then I’ll tell you how to cook jelly from cranberries and starch.

To prepare the jelly, first wash and sort the cranberries.

Then pour boiling water over a sieve. Let the water drain, then mash the berries with a spoon.

Pour the resulting juice into a separate bowl and place in a cool, dark place.

Place the mashed berries in cheesecloth and squeeze the remaining juice into an enamel pan. Add a glass of hot water, put it on the stove and bring to a boil. Strain the mixture through cheesecloth and pour it back into the pan. Add 3 teaspoons of sugar there.

Cool ¼ of the strained broth, and then dilute 2 teaspoons of starch in it. You can dilute starch in ordinary cold water.

Place the strained broth on the stove, cook, stirring constantly, and when it boils, pour in the diluted broth with starch. Add vanilla to taste. Mix. We wait until the jelly boils, and immediately pour it into another bowl. Continue stirring so that the jelly does not boil over and become watery. When the jelly has cooled, add raw squeezed cranberry juice to it.
