Tuscan Creamy Chicken with Mushrooms

Unusually juicy and tasty — a holiday every day! Chicken with champignons in a creamy sauce is cooked with mushrooms in a frying pan with the addition of herbs and seasonings. We cook it in Tuscan style, with olive oil, Parmesan and tomatoes. Everyone gets it right the first time, even beginners, it’s easy!

Garlic 3 clove
Tomatoes 300 g

How to make chicken with champignons in creamy sauce? Prepare the necessary ingredients. For the dish, you can use a whole chicken, having previously cut it into portions, or immediately take individual parts to taste.

Wash the chicken and dry it. Cut the chicken into portions and remove the skin if desired. I left only the wings with the skin on; I cut off the skin from the rest of the parts to make the dish less high in calories.

Wash the mushrooms and cut into not very thin slices. Small mushrooms can be left whole.

Wash the tomatoes. If the tomatoes are large, cut them into slices; if they are small, like mine, cut them in half. Choose tomatoes that are juicy but firm. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.

Wash the spinach and dry. I used fresh baby spinach, but frozen will also work.

Peel the garlic and chop finely.

Grate the cheese on a fine grater. In addition to Parmesan, you can also use regular cheese such as Russian or Gouda.

Heat vegetable oil in a frying pan over medium heat. Add the chicken, season with salt, pepper and oregano and fry until golden brown, about 8 minutes on each side. Remove the bird from the pan.

In the same frying pan, melt the butter over medium heat. Add mushrooms and fry, stirring until golden brown.

Add garlic and cook until fragrant, about 1 minute.

Add tomatoes and spinach to the pan and cook, stirring occasionally, for about 3-4 minutes until all the spinach leaves have curled.

Pour cream into the pan and add grated cheese. Salt and pepper to taste. Stirring, bring the mixture to a boil over low heat. Simmer the sauce for about 3 minutes until thickened.

Return the chicken to the pan and heat everything together for another 5-7 minutes. The exact braising time depends on the size and thickness of the poultry pieces. Therefore, be guided by the readiness of the chicken.
