Hearty Beef and Vegetable Stew

Incredibly soft and juicy — everyone will be delighted! Beef stewed with vegetables turns out very tasty and tender. In addition, it can be made in advance so as not to waste time cooking on holidays or weekends. Serve well with any vegetable side dish, pasta, or rice.

Basic:

Garlic 3 clove
Olive oil 3 tbsp
Salt to taste
Ground black pepper to taste
Water (or more) 800 ml
Tomato paste 3 tbsp
Carrot (large) 2 pc
Bulb onions (large onion) 1 pc
Bacon (or other smoked meats) 200 g
Celery stalk 3 pc
Beef shanks (I have it with and without bone) 2 kg

How to stew beef meat with vegetables in a saucepan on the stove? Prepare your ingredients. Wash the beef shank, dry it and chop it into large pieces. You can take a whole shank. I used already prepared parts. Of these, 1.5 kg of boneless meat and 500 g of osso bucco with bone. For this dish, it is better to choose shanks, since during the stewing process the meat from them is better cooked. But you can buy any part of the carcass to suit your taste.

Wash the vegetables well. Peel the carrots, onions and garlic. Cut celery, onion and carrots into small pieces. Cut the garlic in half.

Transfer the prepared vegetables to a blender and grind into a homogeneous puree.

Cut the smoked meats into small pieces. I took 100 g of raw smoked bacon and 100 g of boiled smoked pork neck. You can do without smoked meats, but with them the dish will taste more interesting and more aromatic.

Heat olive oil in a frying pan and fry the meat over high heat until golden brown. I note that at this stage we do not cook the meat, but simply fry it on top, thereby sealing all the juices inside. This well-known culinary technique makes the finished meat juicy. Place vegetable puree in a deep saucepan, add tomato paste, smoked meats, salt and pepper.

Pour 200 ml of hot water into the pan and bring the vegetable puree to a boil.

Place the meat in the pan, pour in the remaining hot water so that it covers the meat almost completely, as shown in the photo. In this case, it may take a little more or a little less water — be guided by your ingredients.

Bring the sauce to a boil, reduce heat and simmer covered for about 2.5 hours, turning the meat occasionally. The exact time depends on the operation of your stove and the size of the piece of meat. Serve the finished stew with vegetables as a separate dish or with your favorite side dish. Bon appetit!
