Garlic 2 clove
Mayonnaise 100 g
Soy sauce 1 tbsp
Sesame oil 1 tsp
Chili sauce 1 tsp
Capelin caviar 50 g

How to make homemade spicy sauce for rolls? Prepare all products. Take mayonnaise with the highest percentage of fat content you can find. You need very thick mayonnaise. Instead of chili sauce, ground pepper will do, use half a teaspoon. If you donʼt have sesame oil, use regular vegetable oil. But it tastes better with sesame. Capelin caviar is a rather rare product on store shelves. I took the smoked version in sauce, this is sold everywhere.

Take a small bowl. Put mayonnaise in it, add chili sauce.

Stir the ingredients using a silicone spatula. It is the most convenient for stirring — it cleans the walls of the dishes very well and does not affect the structure of the stirred products.

Add sesame oil and soy sauce. Mix everything again until smooth.

Peel the garlic cloves. Grate it on the finest grater directly into the sauce. Or put it through a garlic press. Mix well.

The last addition will be capelin caviar. If you suddenly buy flying fish caviar — tobiko, it will be great! Real spicy sauce is made with it. It is sometimes found on sale. If you don’t find it, look for capelin caviar. If you donʼt find capelin, use any fish roe. The main thing is that it is small.

Mix all ingredients completely. The sauce should be very homogeneous, silky consistency, delicate light salmon color. The sauce is ready to eat. If you want to bake rolls or sushi with it, then place a spoonful of sauce on top of them and bake for 5-10 minutes. Bon appetit!
