Basic:

Onion 1 pc
Olive oil 4 tbsp
Salt to taste
Ground black pepper to taste
Water 1 cup
Carrot 1 pc
Minced meat 400 g
White wine (dry) 100 ml
Celery stalk 1 pc
Italian herbs 0.5 tsp
Tomato sauce (pureed tomato pulp) 250 g

How to make Bolognese sauce with minced meat at home? Prepare your food. It is better to use mixed minced meat (beef and pork), it will make the sauce moderately fatty, but not too dry. The wine can be taken either white or red. Pay attention to its quality, the alcohol will disappear, but the taste will remain. I always use pureed tomato pulp for bolognese. You can replace it with diluted tomato paste, tomato sauce or fresh tomatoes.

Cut the peeled onion into small cubes.

Wash the celery stalk and cut it into cubes, just like the onion. It is better if the vegetables are cut the same way, so they will cook at the same time and will look neater in the sauce.

Rinse the carrots well under running water, then peel. Cut the carrots into cubes.

Heat a frying pan over medium heat. For preparing the sauce, dishes with a thick bottom are better suited; they retain heat better when stewing, and the food turns out stewed. Fry the vegetables for a few minutes until softened.

Add minced meat to the vegetables. Mash it thoroughly with a spoon, breaking up large pieces.

Fry the minced meat for about 10 minutes, stirring constantly until it completely changes color. When this happens, pour in the wine. Stir. Let the wine evaporate, it will happen quickly, a few minutes will do. The alcohol will evaporate, but the taste of the wine will remain and give the sauce a piquant note.

Add mashed tomatoes, stir. Add dry herbs, salt and pepper. Pour in water. Mix the sauce well. Cover the pan with a lid and reduce heat to low. Simmer the sauce for an hour, stirring occasionally and checking the thickness. Add more water if necessary.
