How to make gluten-free pizza dough? Prepare all the necessary products. It’s easier to buy ready-made rice and corn flour, since it takes a long time to make it yourself in a coffee grinder. Instead of olive oil, you can use another vegetable oil of your choice.

To knead the dough, take a deep bowl in which it will be convenient to mix dry and liquid ingredients. Add sugar, salt and yeast to warm water (37-40°C). Stir with a spoon until completely dissolved. In the absence of a special culinary thermometer, the required temperature can be determined in the following way: you need to drop a drop of water on the inside of your wrist. If the feeling is neutral — neither cold nor hot, then the temperature is correct.

If the temperature is too low, the yeast will work more slowly and will take longer to cook. At elevated temperatures, the yeast will die and the dough will not rise. Add a spoonful of vegetable oil and stir thoroughly. Add rice flour and stir until smooth.

Next, add corn flour little by little, kneading the dough. The dough, compared to dough made from flour with gluten, is not elastic and does not hold its shape, as if falling apart. Thatʼs how it should be. The main thing is that it should not be dry.

Knead the dough with your hands for about 10 minutes. Then grease your hands, bottom and sides of the bowl with vegetable oil so that the dough does not stick. Gather the dough into a ball.

Cover the dough with cling film or a damp towel and place in a warm place for 1-1.5 hours. In order for the dough to turn out successful, it must be in a warm place with high humidity. When the dough has risen, cracks have appeared on it, you can work with it. You can make 2 medium pizzas from this amount of dough.

The dough is very delicate, so it is better to spread it onto a baking tray with your hands. Be sure to grease the baking tray or baking paper with oil. Before putting the pizza in the oven, leave it to proof for half an hour. This will make the dough more fluffy. The temperature is the same as for traditional pizza dough.
