Baked Grenadier in Parchment

The lowest calorie recipe with delicious and healthy fish! A very dietary, but not at all boring dish. The main secret to success is to marinate the fillet before cooking. The marinade works some kind of biochemical miracle with the grenadier, changing the texture and taste of the fish.

Ingredients (1 portion)

For baking:

Macrurus 150 g
Carrot 20 g
Zucchini 20 g
Bulb onions 10 g
Salt to taste
Ground black pepper to taste
Thyme, thyme to taste

For the marinade:

Honey 0.5 tbsp
Soy sauce 60 ml
Water 40 ml
Garlic 0.33 clove
Ginger 6 g

Dry the fillet from which excess water has previously been drained in a colander with a paper towel. In a glass container, mix the marinade: honey, sauce, water, finely chopped garlic and ginger. Dip the fillet in the marinade, coat both sides well, cover the container with a lid or cling film and refrigerate for 30–40 minutes.

Cut the vegetables into strips.

Cut out two squares of approximately 25x25 cm from baking paper (if you don’t want to bother with envelopes for a beautiful presentation, you can just take a large piece of baking paper and then wrap it with “candy”). Place vegetables on the bottom sheet. Remove the fillet from the marinade, shake it lightly and place on top of the vegetables.

Cover the vegetables and fish with a second sheet and fold the edges on all sides to form an envelope. Bake for 15 minutes at 180°C.
