How to make fried eggs? First, prepare the necessary ingredients. Take large, selected eggs. To make scrambled eggs not only tasty, but also beautiful, it is better to use country eggs with a large, rich yellow yolk. Be sure to take fresh eggs. You can replace butter with vegetable oil.

Place the frying pan on low heat (I use setting 2 out of 9) and heat thoroughly. This may take up to 5-7 minutes. Place a piece of butter and melt. When the oil begins to bubble, carefully and slowly crack the eggs into the pan, being careful to keep the yolk intact. It is very important to heat the pan in advance so that when the protein comes into contact with a hot surface, it immediately sets and does not spread throughout the pan in a thin layer.

Fry the scrambled eggs over low heat without a lid for about 5 minutes. The white should set, but the yolk should remain semi-liquid and bright. To prevent the yolk from becoming covered with a whitish film and maintaining a semi-liquid consistency, it is better not to cover the pan with a lid. And if you cover it, do it for no longer than 1-2 minutes. In this case, do not add heat, otherwise the scrambled eggs will quickly fry and the yolk will harden.
