Ingredients (4 portions)

Basic:

Garlic 1 clove
Salt to taste
Ground black pepper to taste
Water 50 ml
Potato 300 g
Zucchini 300 g
Vegetable oil 2 tbsp
bell pepper 1 pc
Thyme, thyme to taste

How to cook stewed zucchini with vegetables and potatoes? Measure out the ingredients from the list. Wash all vegetables thoroughly and dry before slicing. The same goes for greenery. Instead of those indicated in the recipe, you can use any other greens to your taste. I used zucchini, but you can use regular zucchini.

Peel the zucchini and cut into quarters. Please note that they need to be peeled if the skin is not as tender and thin as that of zucchini. I left the peel.

Cut the bell pepper in half, remove the seeds and cut into strips or cubes.

Peel the potatoes and chop coarsely. Although the size of the cut here only affects the appearance of the dish, not its taste. So you can cut it smaller than mine.

Heat the vegetable oil in a frying pan and, stirring, fry the potatoes in it for 7-10 minutes until golden brown. Keep in mind that it may take you more or less time than it did for me. Add bell pepper to the potatoes and fry the vegetables for another 3-4 minutes, stirring.

Place the chopped zucchini in the pan. Stir. Fry the vegetables together for 4 minutes. Pour in water and stir. Simmer for another 7-10 minutes until the vegetables are ready.

Peel the garlic clove, crush it with a knife and place it in the pan. Season the vegetables with salt and pepper. Cook for another 2 minutes, stirring.

Sprinkle the finished dish with chopped herbs and serve immediately.
