How to make pangasius with sour cream and vegetables? First of all, prepare the fish fillet. Remove it from the freezer and leave it at room temperature until completely defrosted. Rinse the pangasius under running cold water and dry with paper towels. There should be no excess moisture left on the fish. (Cooking times in the recipe do not include defrosting.)

Prepare all other products according to the list. Take ripe and juicy tomatoes, sweetish carrots, then the finished sour cream sauce will be rich and very tasty.

Cut the fish into pieces about 3-4 centimeters long.

Sprinkle the pangasius with a little salt and season with ground pepper. Turn each piece over and do the same on the other side. Leave the fish for 5-10 minutes, and at this time take care of the vegetables.

Peel the onions, carrots and garlic. Remove the stem and core with seeds from the pepper. Rinse all vegetables in clean water and dry. Cut the carrots and peppers into thin cubes. You can grate the carrots, as is more familiar and convenient for you. Chop tomatoes and onions into small cubes. Peel the tomatoes first if you prefer. Pass the garlic through a press or chop finely with a thin knife.

Pour odorless vegetable oil into the frying pan. Heat a frying pan over high heat and fry the pangasius. Cook for about 1-2 minutes on one side.

Then turn each piece over and leave to fry on the other side for 1-2 minutes. Before frying, pangasius can be dipped in flour; I usually cook without it.

Carefully remove the fish using a spoon or fork. Add all vegetables to the same pan. Add a little oil if necessary. Fry, stirring for about 5-7 minutes. If necessary, reduce the flame slightly so that the vegetables do not burn.

Add sour cream, a little salt and your favorite seasonings to the pan. I have seasoning for tomatoes, a pinch of Provençal herbs and allspice. Mix everything thoroughly until smooth.

Place the fish pieces lightly, as if pressing them into the sour cream and vegetable mixture. Cover with a lid and reduce heat to low. Simmer with the lid closed for about 10-12 minutes.
