Tomato-Stewed Cod with Veggies

Ingredients (5 portions)

Basic:

Onion 300 g
Salt to taste
Sugar 1 tsp
Wheat flour 3 tbsp
Water 1 cup
Bay leaf 1 pc
Tomato paste 1 tbsp
Carrot 300 g
Vegetable oil 3 tbsp
Allspice 4 pc
Cod fillet (Any fish fillet, or fish with bones.) 700 g

How to stew fish fillet in tomato paste with vegetables? I chose boneless cod fillet, but you can use any fish you like. It needs to be thawed and cut into portions.

In a suitable bowl, combine regular wheat flour and salt. Roll each piece of fish in the resulting mixture on all sides.

Heat a frying pan over high heat. Pour in two tablespoons of sunflower oil and heat it thoroughly. Only after the oil is hot enough is it ready to go. Place the fish pieces into the pan. Fry the fish until golden brown. It took me about three minutes for each side. Do not cover the fish with a lid. After frying, remove from heat.

Peel the onion and chop into thin half rings. Pour a tablespoon of sunflower oil into a separate frying pan and heat it. Fry the onion for five minutes.

Wash and peel the carrots. I use a special knife for peeling vegetables. It is very convenient and much faster than working with a regular knife.

Grate the peeled carrots on a coarse grater and add to the pan. Fry everything together for about seven more minutes.

Add tomato paste. To stir thoroughly. The tomato paste should warm up well and combine with the vegetables.

Pour in a glass of boiling water. Be careful not to get burned! At this stage, add salt and sugar to the marinade to taste. Add a little at a time and taste. Boil the marinade for five minutes.

Now you need to transfer half of the marinade from the pan. Add half the bay leaf and sweet peas to the rest of the marinade.

Place fish pieces on top. Add the remaining bay leaf and sweet peas. Distribute the second part of the marinade evenly. Simmer the fish with the lid closed for forty minutes.
