Chicken and Lentil Delight

Healthy, satisfying, incredibly tasty dish. Everyone will like it! Lentils with chicken are both tasty and healthy, as they contain a lot of protein. Itʼs quick and easy to prepare. Slightly sweet, with a light nutty aroma, it goes well with vegetables and tender fillet. You can complement the dish with bell pepper or paprika.

Garlic 1 clove
Salt to taste

Bulb onions 1 pc

Chicken fillet 200 g

Herbal mixture (I have Provençal (0.5 tsp.) to taste

How to make lentils with chicken? Prepare the necessary products. Any lentil will do: red, green or yellow.

Peel the onions, wash them, cut them into small cubes.

Peel the carrots, wash them, cut them into small cubes.

Wash the chicken fillet and dry it. Cut the fillet into small pieces.

Peel the garlic, chop finely. Choose the degree of garlic chopping as desired. You can chop it finely, pass it through a press or cut it into slices. Heat vegetable oil slightly in a frying pan. Add the garlic, simmer the garlic in oil for about 1 minute until a piquant aroma appears. I removed the garlic from the pan. Turn up the heat. Place chicken pieces in the pan. Fry the fillet over moderately high heat until golden brown.

While frying, turn the pieces periodically so that they brown evenly on all sides. Salt the chicken a little.

Reduce heat to moderate. Place the prepared onions and carrots in the frying pan with the meat, stir. Fry the vegetables and meat, stirring occasionally, until half cooked. Add aromatic herbs. Any spices according to your preference will complement the taste of lentils well.

Cover the pan with a lid and cook the vegetables until soft.

At the same time, cook the lentils. It does not require pre-soaking. Rinse the lentils well with water. In a saucepan of suitable volume, fill the lentils with cold water at a ratio of 1:2. For example, for 1 cup of lentils you need to take 2 cups of water. Bring lentils to a boil. While boiling, skim off any foam that forms.

Add a clean bay leaf to the pan. Cook the lentils over low heat until the water is completely absorbed. At the same time, do not forget to stir so that the lentils do not stick to the bottom of the pan. If the water has been absorbed and the lentil grains are still damp, add a little more hot water. The lentils will become soft, tender and golden in color.

Towards the end of cooking, add salt to the lentils. Cooking time will depend on the operation of your stove, as well as the type of lentils. For red lentils, about 15 minutes is enough. You can leave the lentil grains partially boiled, like I did. Or cook the lentils a little longer and bring them to a more viscous, almost puree-like state.

Place the lentils in the pan with the meat and vegetables, stir and heat over low heat for about 5 minutes. Cover the pan with a lid and let the dish sit for another 5-10 minutes so that the lentils are saturated with the aroma and flavor of the seasonings and vegetables.
