How to make a quick and juicy Turkish omelette Menemen? Very simple! First, prepare the necessary ingredients to taste. If you donʼt have a large tomato, you can replace it with 2 small ones. You can use any vegetable oil. I have sunflower. You can take 1 tsp. vegetable and butter.

Wash the bell pepper and dry it. Remove seeds and stem. Cut the pulp into strips. To make the dish more beautiful, I used green bell peppers. You can take any color of pepper. In Turkey, instead of bell peppers, they use a different variety for omelettes: the pods are oblong, like Ramiro peppers, but dark green. The pepper is not as hot as chili, but not quite sweet either. Iʼve never seen peppers like this in our stores. Therefore, I replaced it with a more affordable one.

Pour boiling water over the tomato and remove the skin. How to easily peel tomatoes? Wash them, make cross cuts on top with a sharp knife. Place in boiling water for 1-2 minutes. Remove, cool slightly and remove the skin. Cut the tomato in half and remove the seeds. Cut the pulp into small cubes.

Wash the parsley, dry and finely chop. If you wish, you can replace or supplement with other herbs, for example, dill, cilantro, or use a mixture of different herbs.

Heat vegetable oil in a frying pan over high heat. Add green peppers and stir-fry for 2 minutes.

Add chopped tomatoes. Fry with constant stirring for another 2 minutes. At the end, add salt and pepper.

Break the eggs into the pan and quickly assemble the omelet with a spatula from the edges to the center.

Fry everything together for 1-2 minutes until the eggs are set and excess liquid has evaporated.
