How to make sandwiches with salmon for the holiday table? Very easy. Start by making the pesto sauce. You can save time and use ready-made store-bought pesto. For the sauce, regular basil with large leaves or bush basil with small leaves, like mine, are suitable. Traditionally, pesto is made with olive oil, but you can use any oil you like.

Place washed basil, olive oil, garlic clove, salt and pepper into a blender bowl. Whisk everything together until smooth.

Now prepare all the other ingredients for the sandwiches. You can replace white wheat bread with bran bread or any other bread you like. You can replace lightly salted salmon with other red fish, lightly salted or smoked. The butter should be at room temperature, so remove it from the refrigerator in advance.

Cut the salmon into thin slices. I used fish that had already been sliced, which saved myself time. If you are using a whole piece of salted fish, then for ease of slicing, it is better to freeze it first.

Cut the tomatoes in half and cut into thin slices. Choose tomatoes that are juicy but firm. Soft fruits do not hold their shape well; during the cutting process they will spread into a shapeless mass and spoil the appearance of the dish.

Cut the mozzarella ball into thin slices. There are two types of mozzarella — pizza and pickle. For sandwiches you need brined mozzarella, which I first removed from the brine and dried.

Spread the bread slices with a thin layer of soft butter at room temperature.

Place a slice of lightly salted fish on one side of the bread slice.

On the other side, place a slice of mozzarella next to the fish.
