A simple, filling and delicious quick snack. Eggplants with walnuts and garlic will be an excellent vegetable addition to meat and fish dishes. Alternatively, they can decorate a holiday table. Making them is not difficult at all. A good snack both hot and cold.

Basic:

Garlic 4 clove
Salt to taste
Ground black pepper to taste
Walnuts 100 g
Vegetable oil 50 ml
Greenery to taste
Eggplant 2 pc
Herbal mixture to taste

How to fry eggplants with walnuts and garlic? First, prepare the products according to the list. Choose spices to your taste, I took Caucasian herbs. Take any greens too; dill, cilantro or parsley will do.

Wash the eggplants thoroughly, cut into rings and sprinkle with salt to remove bitterness, leave for about 10 minutes. Cut them into slices if you want to make eggplant rolls, or if you prefer this way of cutting. Determine the thickness of the slices to your taste. Optimally from 7 mm.

Rinse the eggplants with cold water to remove salt and pat dry with a towel.

Toss the eggplants with salt, pepper and herbs and leave for 5 minutes.

Place the eggplants in a preheated frying pan with vegetable oil and fry over medium heat until golden brown.

Then flip to the other side and cook until cooked through, about 2-3 minutes.

Place the fried eggplant on a paper towel to remove excess oil.

Grind the walnuts using a blender.

Peel the garlic, rinse with water and chop, then combine with the nuts in a bowl.

Wash the greens (I took parsley) thoroughly, dry them, and chop finely.
