Pea-Based Vegetarian Sausage with Aromatic Spices

Ambiguous recipe. There is room for experimentation. Vegetarian sausage is made from pea puree and this taste is palpable and noticeable. Aromatic spices and garlic give the dish its flavor, so don’t ignore them. It is worth noting the structure of the sausage — it is not crumbly, but rather brittle and crumbly. I would like to add something else to improve the structure and finally “remove” the pea taste.

Ingredients (8 portions)

Basic:

Garlic 4 clove
Salt 1 tsp
Sugar 0.5 tsp
Ground black pepper to taste
Ground coriander to taste
Nutmeg to taste
Bay leaf 1 pc
Vegetable oil 100 ml
Yellow peas 400 g
Allspice 2 pc
Juice (beetroot) 3 tbsp

Prepare peas, vegetable oil (I used unrefined corn oil), beet juice, garlic and spices.

Pour 500 ml of boiling water over the peas (!!!). This is important, boiling water will allow the peas to boil quickly. Add bay leaf, allspice, a little salt. Cook for 5-10 minutes over medium heat. Add a little more boiling water as needed, stirring occasionally. It is necessary that the peas are boiled and do not stick to the bottom.

Puree the boiled peas using a blender, add ground coriander, ground black pepper, and vegetable oil. Whisk.

Add beet juice (1 tbsp) and chopped garlic. Whisk.

Add beet juice until desired shade is achieved.

Transfer the still hot puree into a clean plastic bottle. Leave in a cool place overnight.

Cut the bottle, remove the sausage, cut into portions.
