Quick Microwave Eggplant & Cheese Appetizer

A very tasty and simple hot appetizer in a hurry! Whole eggplants with cheese are baked in the microwave for literally 10 minutes, the eggplant is perfectly baked, and the filling becomes juicy and aromatic. Try it too!

Garlic 1 clove
Tomatoes (or one small) 0.5 pc
Salt to taste
Ground black pepper to taste
Hard cheese 30 g
Vegetable oil 2 tsp
Mayonnaise 1 tbsp
Eggplant 1 pc

How to bake whole eggplants with cheese in the microwave? Prepare your food. It is better to cook one eggplant at a time, for one or two servings.

Wash and dry the eggplant. Cut off the tail. Cut the eggplant in half lengthwise. Using a knife, make deep cross-shaped cuts on both halves. Pour vegetable oil over them so that it gets into these cuts.

Place the eggplant halves on a plate and microwave. Cook them for 3 minutes at 750W. If your maximum power is less, then increase the baking time. Carefully remove the pulp from the baked eggplants with a spoon, being careful not to damage the walls and bottom of the vegetable. Place the pulp in a bowl.

Cut the cheese into small cubes — then it will melt faster and better. Any cheese is suitable for this dish — hard, semi-hard, soft, such as mozzarella. The main thing is that it is tasty, of high quality, without milk fat substitutes and melts well. Place the chopped cheese in a bowl with the eggplant pulp.

Wash the tomato and also cut into cubes. Transfer it to the bowl with the filling.

Squeeze a peeled clove of garlic through a press. Add mayonnaise. Salt and pepper the filling to taste. Keep in mind that it already contains salted cheese and mayonnaise. Stir.
