Onion (large) 3 pc
Garlic to taste

Carrot 3 pc
Vegetable oil (or a little more as needed) 100 ml
bell pepper 3 pc

How to make pork ribs in a cauldron over a fire? Itʼs not difficult at all! Prepare all the necessary products according to the list. If you have frozen ribs, you need to defrost them first. How to do this correctly, read the article at the end of the recipe. The set of vegetables can be changed to your taste. I usually use seasonal vegetables from the garden.

Peel onions, carrots, bell peppers and garlic. Rinse everything well and dry with napkins. Cut the vegetables as desired as you like. Do not chop too finely, otherwise the vegetables will look like porridge in the finished dish.

Heat the vegetable oil well in a cauldron. Using a slotted spoon, pour hot oil over the edges of the cauldron (be careful not to burn yourself!). Send the onions and carrots to fry. Cook over high heat, stirring occasionally, until the onions and carrots are browned.

Using a slotted spoon, remove the fried vegetables into a separate bowl.

Place the bell pepper in the cauldron. Fry, stirring, until soft. Remove with a slotted spoon to a bowl with onions and carrots.

Cut the garlic cloves in half or into quarters lengthwise. Place in a cauldron and fry. If necessary, add a small amount of vegetable oil. When the garlic turns golden and gives all its aroma to the oil, remove it using a slotted spoon.

Place the ribs in aromatic oil in a cauldron.

Fry over a high fire until golden brown. Salt everything to taste. Next, pour in 50-100 ml of water, turn the flame under the cauldron to minimum, cover the cauldron with a lid and simmer the ribs for about 30 minutes. After a while, open the lid and check if the meat is burning (add a little more water if necessary).

Add fried vegetables to the cauldron.

Stirring until everything is ready. It took me another 10-15 minutes. Add salt if required.

Pepper the finished dish and sprinkle with fresh herbs. For brightness, I cut a red onion into thin feathers and also sent it to the cauldron.
