How to bake onions and carrots in the oven? Prepare your food. Choose onions that are not very large so that they have time to bake. Carrots are of sweet varieties, then in combination with onions and spices it will emphasize their taste. Any vegetable oil will do — sunflower or olive. Take only refined, odorless. You can use any spices, I used pepper and oregano. Thyme and herbes de Provence work well. Turn on the oven to 180 degrees in advance.

Wash and peel the carrots thoroughly. Cut it into long thin pieces. Try to make pieces of the same size both in length and thickness — then they will bake evenly.

Peel the onion and cut into slices — first cut the onion in half, then each half into 4 or more pieces, depending on the size.

Take any form suitable for baking, even a baking sheet will do. Cover the bottom with foil — it will prevent the vegetables from burning, and the pan will be easier to clean. Place chopped vegetables on foil. Salt them to taste and season with spices. Pour vegetable oil on top. Using your hands, toss the onions and carrots until each piece is coated with oil. Bake the onions and carrots in the oven, preheated to 180°C for 45-60 minutes. The exact time will depend on your oven and the size of the vegetables. The carrots should become soft.
