Basil (2-3 branches) 15 g
White bread (baguette) 150 g
Cherry tomatoes 150 g
Stracciatella (can be replaced with any other soft cheese to taste) 150 g

How to make bruschetta with tomatoes and stracciatella? Very simple and fast. To begin, prepare all the necessary ingredients according to the list. Instead of a baguette, you can use a regular loaf or rye bread.

Cut the baguette into slices 1-1.5 cm thick. If desired, you can lightly grease the bread with vegetable oil. Place the bread on a baking sheet lined with parchment and dry in an oven preheated to 180ºC for 5-7 minutes until golden brown. The exact time depends on your oven. Instead of baking in the oven, you can dry the bread in a dry frying pan on both sides. Rub the hot baguette with a peeled garlic clove. Cool the bread.

Wash the tomatoes, dry and cut into quarters. I used cherry tomatoes, but one regular tomato will do. Choose tomatoes that are juicy but firm. Soft fruits do not hold their shape well; during cutting and cooking, they will spread into a shapeless mass and spoil the appearance of the dish.

Remove the basil leaves from the sprigs. If the bush basil has small leaves, like mine, then there is no need to additionally chop the leaves. If the leaves are large, chop them with a knife.

In a bowl, combine tomatoes, basil, olive oil, salt and pepper and stir to combine. In addition to the ingredients listed, you can add your own to taste. For example, finely chopped bell peppers, olives, etc.
