Hearty Porcini Mushroom Pasta

A beautiful, hearty, quick dish made from simple ingredients for the whole family! My family really loves pasta and mushrooms and any dishes made from them. And I decided — why not combine my favorite products? I had porcini mushrooms in the freezer from last season, and since they replace meat in their properties, it turned out to be a very satisfying dish. And if you don’t add sour cream, it will also make a wonderful dish for Lent!

Ingredients (6 portions)

Basic:

Onion 1 pc
Garlic 3 clove
Olive oil 2 tbsp
Salt to taste
Ground black pepper to taste
Sour cream 150 g
Parsley (2-3 branches) to taste
Dill (2-3 branches) to taste
Parmesan (or any hard cheese) 30 g
White wine (dry) 150 ml
Pasta 300 g
White mushrooms 400 g

First of all, put a pan of water on the stove

Crush the garlic with the flat side of a knife and chop

Place in a frying pan with heated olive oil

Finely chop the onion

By this time the garlic has already given off its aroma — add the onion. Fry until golden brown

Add mushrooms and fry for another 7-10 minutes

Meanwhile, the water in the pan has boiled — add salt, add a drop of olive oil and add pasta, cook until al dente

The next step is to add dry white wine to the mushrooms. You can, of course, do it without it — but it is precisely this that, as if by magic, will turn our simple dish into something exquisite. Warm up for 2-3 minutes

Then add sour cream, ideally mascarpone. Warm up for a couple more minutes

While the mushrooms were fried, the pasta was already cooked — drain it in a colander

Add pasta to our mushrooms

Meanwhile, grate parmesan on a fine grater (you can use any other hard cheese)
