A very satisfying, rich and healthy dish! An excellent side dish for meat or chicken, rice with green beans can also serve as a complete meal. Rice can be cooked during Lent and thereby diversify your daily menu.

Ingredients (6 portions)

Basic:

Onion (about 100g.) 1 pc
Garlic (optional) 2 clove
Tomatoes (optional) 2 pc
Salt to taste
Ground hot pepper to taste
Rice 1 cup
Carrot (about 100g.) 1 pc
Vegetable oil 3 tbsp
bell pepper (about 80-100g.) 1 pc
Greenery to taste
Green beans 250 g
Tomato sauce 150 g

Prepare all the necessary ingredients that we will need to prepare rice and green beans. Beans can be taken either fresh or frozen.

Peel the carrots, onions and garlic. Cut the pepper into two parts, remove the core with seeds and the stalk. Rinse vegetables in clean water.

Cut the ends off the beans. If the beans are not very young, then they have harsh tendrils on the sides that will be felt in the finished dish, remove them.

Cut the carrots into cubes or grate them on a coarse grater, whichever is more convenient for you. Chop the onion and bell pepper into small half rings or a little smaller. Cut the beans into pieces one and a half to two centimeters long (as in the photo).

Make a cross-shaped cut on the tomatoes and pour boiling water over the tomatoes. After a minute, drain the water (carefully, don’t get burned!).

Remove the peel from the cooled tomatoes (after boiling water this will be very easy and simple).

Cut the tomatoes into small cubes, and chop the garlic finely by hand (if desired, garlic can be excluded from the list of products). Prepare tomato sauce.

Heat the vegetable oil in a frying pan, using a dish with high edges if possible. Briefly fry the onions and carrots, stirring continuously so that nothing burns.

Add the bell pepper to the pan and fry for about another minute.

Next comes the turn of beans and tomatoes. Send them to the vegetables, stir, reduce the heat to medium and simmer under a closed lid for about 10 minutes. The tomatoes should give juice, lift the lid and check, if there is not enough liquid from the tomatoes, then add a few tablespoons of water so that the vegetables are stewed and not fried.

Pour the tomato sauce into the frying pan, add salt to taste, mix everything again, leave for 2-3 minutes, and at this time prepare the rice.

Rinse the cereal several times until the water is clear.

Place the rice in the pan, spread in an even layer, and turn the heat up to high.

Fill the contents of the pan with water so that it covers the rice by about 1.5 centimeters. Cover with a lid, after boiling, reduce the stove to medium and cook for about 20-25 minutes.

During this time, the rice should be cooked and the water should be almost completely absorbed. Sprinkle the rice with finely chopped herbs.

Gently stir the contents of the pan; if there is too much liquid left, turn up the heat a little and, stirring, cook until the desired amount of sauce has evaporated. This takes approximately 1-2 minutes. At this stage, taste for salt and add salt if required.
