How to bake Leningrad cookies at home? Prepare the indicated products. Sift the flour first, this will make the dough more tender. Take eggs of category C1. All you need is the zest of the lemon. To prepare cookies, also prepare a mixer, a pastry bag, and a cookie baking tray.

Beat the eggs into a deep bowl, add powdered sugar and mix with a spoon. Instead of powdered sugar, you can use fine granulated sugar, but you will need to make sure that it is completely dissolved when kneading the dough.

Then take a mixer and beat the eggs with powdered sugar until the volume increases by 2 — 3 times. This may take 5-10 minutes depending on the power of the mixer. The result should be a thick white mass.

Rinse the lemon very thoroughly with water (you can use special products for washing fruits) and dry with a towel. Grate the lemon zest with a fine grater and add to the dough. Add sifted wheat flour to the dough. Depending on the quality of flour, you may need a little more or a little less. Using a mixer, stir the dough until all ingredients are combined. It should turn out homogeneous and thick.

Place the dough in a pastry bag and cut off the tip no more than 1 cm. Grease a baking tray with vegetable oil or line it with baking paper. Pipe the dough from the pastry bag, leaving 1.5 — 2 centimeters of space between the cookies.

Sprinkle each cookie with sugar. Place the baking sheet with the cookies in a warm, dry place for 2 hours (I put it in the oven with the light on).

During this time, a thin, fragile crust forms on the surface of the cookies. Turn on the oven to preheat at 180 degrees (without cookies). Once hot, place the pan in the oven for 5 to 6 minutes.
