Basic:

Garlic 3 clove
Tomatoes 150 g

Water 150 ml

Zucchini 200 g
Carrot 1 pc
Vegetable oil 10 g

How to make vegetable stew with mushrooms and potatoes? Prepare the necessary ingredients for this. You can use any tomatoes — regular, cherry or even canned in their own juice. Choose mushrooms according to your taste. I will cook with boiled forest mushrooms, but you can use champignons or oyster mushrooms.

Peel the onions and carrots and rinse them to remove dirt. Finely chop the onion and cut the carrots into cubes or slices. There is no need to grind it too much, otherwise it will all boil apart during stewing.

Pour a little vegetable oil into a hot frying pan and add onions and carrots. Fry, stirring, for a minute.

Then add the mushrooms to the pan. If you take champignons, then just wash them, cut them and you can cook them right away. Fry everything together for another 3-5 minutes.

Cut the peeled potatoes into pieces and place in the pan with the mushrooms. Add a little hot water and simmer everything under the lid for about 15 minutes.

Peel the bell pepper, cut it and add it to the frying pan. Cover again for another 5-7 minutes.

Then add the chopped zucchini. Cook for another 5-7 minutes. What kind of zucchini works best? Choose young fruits with delicate skin. It is not necessary to cut off very thin skin. If using more mature squash, trim off the rough skin and scoop out the seeded center.

During this time, finely chop the greens. Cut the cherry tomatoes in half.

Place the greens and tomatoes in a frying pan. Add salt and spices to taste. Mix everything and heat for a couple more minutes. Remove the finished stew from the heat and leave to stand covered for 10-15 minutes.
