Creamy Cod and Rice Delight

A delicious dinner for the whole family, made from regular ingredients! Cod with creamed rice is a classic, time-tested combination. The dish is not at all dry due to the addition of a creamy, aromatic sauce. It is prepared very quickly and everyone likes it — both adults and children.

Ingredients (3 portions)

For the main dish:

Cod fillet 300 g
Rice 0.5 cup
Wheat flour 3 tbsp
Vegetable oil 0.5 tsp
Lemon juice to taste
Pepper to taste
Salt to taste

For the sauce:

Cream 150 ml
Butter 30 g
Basil to taste
Salt to taste

How to make cod with creamed rice? Prepare your food. Take long-grain, steamed rice. Thaw the cod fillet first. Heavy cream for the sauce is suitable, 20%. If you use cream with a lower fat content, then when preparing the sauce you will need to add a little flour for thickness. Basil can be dried or fresh.

Rinse the cod fillets under running cold water. Dry it with a paper towel. Clean the fish from any remaining bones. Cut it into even portions, trimming off any irregularities. Salt each piece and sprinkle with lemon juice. Leave them to marinate at room temperature while you prepare the sauce.

Boil the rice until tender in a manner convenient for you or according to the instructions given on the package. I usually pour boiling water over rice at a ratio of 1:2 and cook until the liquid evaporates over medium heat. You can first fry the rice in oil for a few minutes, add two volumes of water and cook until tender.

Grind the fish trimmings.

Melt the butter in a heated frying pan and fry the chopped fish in it over high heat until golden brown.

Add cream, dry or fresh basil, and a little salt to the fish. Stirring constantly, bring the sauce to a boil. Wait for it to thicken to the consistency of liquid sour cream.

Roll portioned pieces of cod fillet in flour on both sides. Heat vegetable oil for frying in a frying pan over medium heat. Place the breaded fish on it. Fry it on both sides until golden brown, about 10 minutes.
