Recipe instructions

Step 1

Step 1
How to make rich yeast pie dough? Prepare the products according to the list. Take compressed yeast. Remove milk, eggs and yogurt from the refrigerator in advance so that they warm up to room temperature. Flour must be of the highest grade; the quality of baked goods will largely depend on this. Take the butter, melt it in a water bath or in the microwave and leave to cool.

Step 2

Step 2
How to make a dough? Pour warm water (35-38 degrees) into the container. Crumble fresh yeast into the water. Add 2 tsp. l. sugar and 3 tbsp. l. flour. Stir, cover with a towel and leave for 10 minutes. The mass should foam and increase by about 2 times. If this does not happen, then you need to take other yeast, since with this the baked goods will not rise.

Step 3

Step 3
In a separate deep container, mix natural yogurt without additives, milk and eggs. Be sure to wash your eggs well before using them, as even seemingly clean shells can harbor harmful bacteria. It is best to use food grade detergents and a brush.

Step 4

Step 4
Place sugar and salt in a bowl. Mix everything.

Step 5

Step 5
The dough for the delicious pastry rose, and a foamy cap formed on its surface. Pour it into the bowl with the milk-egg mixture.

Step 6

Step 6
Mix the mixture well with a whisk until smooth.

Step 7

Step 7
Be sure to sift the flour to saturate it with oxygen, then the baked goods will turn out fluffy and airy. Add it to the mixture piece by piece.

Step 8

Step 8
When half of the flour is added, add butter melted in a water bath or in the microwave. Knead the dough by adding the rest of the flour.

Step 9

Step 9
Add flour gradually, as you may need less or more of it than indicated. Focus on the required dough consistency. It should turn out elastic, soft, and not stick to your hands.

Step 10

Step 10
Transfer the butter dough with milk into a plastic bag and put the dough in the refrigerator for 2-3 hours, or preferably overnight. But if you prefer, you can leave it to rise in a bowl on the counter at room temperature.

Step 11

Step 11
After 2 hours in the refrigerator, the dough rose perfectly. You can start cutting.

Step 12

Step 12
Knead the dough again. This is such a good, very docile and tender pastry for pies.

Step 13

Step 13
This dough can be used to bake pies or pies in the oven. I made these sweet pies with apples. It turned out very tasty, try it too. Bon appetit!
