The good thing about the recipe is that you can change it to your taste: in addition to mushrooms, add other vegetables, cheese, and herbs. It turns out to be a simple but satisfying dish for a family lunch or dinner.

Pasta nests 200 g

Filling:

Champignon 200 g
Cherry tomatoes 50 g
bell pepper 1 pc
Cheremsha 15 g
Olive oil 2 tbsp
Ground black pepper to taste

How to cook nests with mushrooms? Prepare the ingredients for the filling. Instead of champignons, you can use any other edible mushrooms. You may need to boil them before frying (especially if you have wild mushrooms). Frozen and dried are also suitable. You can replace wild garlic with spinach. Or remove it completely by adding cheese to the filling. Take vegetables that are juicy and ripe.

Wash the champignons, dry and cut into slices.

Wash vegetables and herbs and dry. Cut the tomatoes into small cubes, cut the pepper into small strips, finely chop the wild garlic.

Heat vegetable oil in a frying pan (I used one tablespoon of olive oil). Place the champignons in the pan and fry them for about 3 minutes, stirring.

Add spices and salt to the mushrooms, simmer them over low heat for 3-5 minutes, stirring occasionally.

Add chopped tomatoes and bell peppers to the mushrooms. Stir. Simmer everything together for about 10 minutes until the bell pepper is ready. I indicate the time approximately — you should always focus on your stove.

Place the wild garlic in a frying pan with other vegetables. Stir. Simmer everything together for 2 minutes. Remove the pan from the heat.

Start preparing the pasta. I have these ready-made raw nests made from egg noodles. You can take nests from classic pasta — thin or thicker. You can also form your own nests from boiled spaghetti.

Boil water in a saucepan, add salt and 1 tbsp. l. olive oil.

Carefully place the nests into boiling water.

Cook the nests at a low simmer for 5-7 minutes until tender. For more precise preparation, follow the instructions on the pasta package.

Carefully, being careful not to damage them, transfer the nests to plates. Place 1-2 tablespoons of filling inside each nest.
