It turns out very tasty and beautiful, besides, bread is no longer needed for this dish. In Turkey, this dish is called “veiled pilaf” and is prepared for a wedding, because the rice symbolizes fertility, the raisins symbolize children, and the dough crust symbolizes protection. And of course, even the most picky guest cannot resist such a golden crispy crust on the outside and a very tasty filling on the inside.

Ingredients (6 portions)

For pilaf:

Chicken 300 g
Parboiled rice 300 g
Carrot 1 pc
Bulb onions 1 pc
Raisin 30 g
Salt to taste
Garlic arrows to taste
Vegetable oil 2 tbsp

For dough:

Salt 1 tsp
Vegetable oil 50 ml
Wheat flour 2 cup
Chicken eggs 1 pc
Kefir 50 ml

Preparing the ingredients. For this dish, we will take chicken, namely breast, because it cooks faster, but you can use beef or any other meat if desired. Garlic can be taken as in the classic recipe, the cloves themselves. But the taste is richer and more piquant if you add chopped green garlic arrows. Wash the rice until the water is clear, then add water and leave for half an hour so that the rice absorbs the water and swells a little.

Wash the meat and cut it into small cubes. Peel the onions and carrots, chop the onion finely, grate the carrots on a coarse grater. Rinse the raisins in running water, pour boiling water over them and leave for a few minutes until they steam and become soft. You don’t have to add raisins, but they add a pleasant sweetness to the dish, but it is better to use small raisins so as not to spoil the dish with excess sugar.

Heat the vegetable oil in a frying pan, fry the onions and carrots until transparent, then add finely chopped garlic arrows, fry everything, stirring with a wooden spatula. Then add the meat and fry until the meat turns white.

Then drain the water, put the raisins and rice in a frying pan with the vegetables, stir, add water so that it covers the contents by one centimeter in height. Reduce heat to medium. If necessary (if it evaporates quickly), you can add water while cooking the dish.

Meanwhile, prepare the dough. Beat an egg into a bowl, pour in kefir, vegetable oil, add salt and soda.

Stir until smooth and add sifted flour. Knead the elastic dough, it should not stick to your hands. Wrap the dough in cling film and leave it on the counter for 20 minutes.

Grease the mold with vegetable oil. You can take any fireproof form. Roll out the dough into a thin layer, roll it out without flour, if it sticks to the table or rolling pin, the surface can be greased with vegetable oil.

If desired, you can put nuts or sunflower seeds on the bottom of the mold, it will turn out even more beautiful and tastier. Place the dough in the mold.

Place the finished pilaf on top, cover it with dough, wrapping the end of the dough inside.

Bake in the oven for about 30 minutes at 180 degrees. If the dough starts to brown quickly on top, then cover the pan with foil and let the dough bake from below. We take out the dish, let it cool, remove it from the mold, cut it into portions and serve. This pilaf made from natural yogurt sauce with garlic and salt is very tasty. Bon appetit!
