Wheat flour 3.5 cup
Butter 200 g
Vanillin (on the tip of a knife) to taste
Eggs 2 pc
Powdered sugar (for sprinkling) 1 tsp
Soda 0.5 tsp
Cottage cheese 250 g

Recipe instructions

Step 1

Step 1
How to make Rosochka cottage cheese cookies? Prepare all the necessary ingredients.

Step 2

Step 2
Wash the eggs with soda to remove all dirt and beat them into a bowl. Next, add sugar and beat with a whisk or mixer until the sugar grains dissolve.

Step 3

Step 3
Add the pureed cottage cheese and beat everything again until smooth. If you have soft, homogeneous cottage cheese, then you don’t have to wipe it, but if it’s grainy, then the cottage cheese should be rubbed through a sieve or punched with a blender. The taste and consistency of the dough will depend on this. Read how to choose cottage cheese in a separate article at the end of the recipe.

Step 4

Step 4
Quench the soda with vinegar or citric acid and add it to the curd mass, stir. Read about the intricacies of using soda in baking in the article at the end of the recipe.

Step 5

Step 5
Use cold (not frozen) butter. Grate it on a coarse grater and add to the total mass. Mix well.

Step 6

Step 6
Sift the flour with vanilla in advance and add gradually. You may need a little less or more flour, it depends on the quality of the flour and the moisture content of the cottage cheese. Read more about the properties of flour and how to replace vanillin in the separate articles at the end of this recipe.

Step 7

Step 7
Knead soft, plastic curd dough. It should not be too dense, but not too sticky. Wrap the dough in cling film and place in the refrigerator for 1 hour.

Step 8

Step 8
Divide the chilled dough into 3 parts. Put two back in the cold, and roll out one part on a floured surface into a thin layer no more than 5 mm thick. Use a round notch to cut out circles.

Step 9

Step 9
Place the circles in fours, overlapping each other. As in the photo.

Step 10

Step 10
Carefully wrap the circles with a roll.

Step 11

Step 11
Using a sharp knife, cut the roll crosswise into two equal parts. Thus, from one roll you get 2 curd “roses”.

Step 12

Step 12
Press the “rose” a little at the base so that during baking the “flower” better retains its shape and does not open up. Bend the rose petals slightly. Form cookies using the remaining dough pieces in the same way.

Step 13

Step 13
Place the prepared cottage cheese cookies on a baking sheet covered with parchment paper. In total I got about 30 “roses”.

Step 14

Step 14
Place the baking tray with cookies in an oven preheated to 180 degrees and bake for 25-30 minutes until golden brown. Time and temperature are approximate, be guided by the operating characteristics of your equipment. Read more about ovens in the article below the steps.

Step 15

Step 15
Cool the finished homemade Cottage Cheese Roses cookies and sprinkle with powdered sugar if desired. Enjoy your tea!
