Recipe instructions

Step 1

Step 1
How to fry crucian carp in a frying pan? Prepare the necessary products. The fresher the fish, the better, but frozen will work too. Thaw it in advance if necessary. To rid crucian carp of the inherent smell of mud, sprinkle it with lemon juice, lightly pepper or add spices — during processing.

Step 2

Step 2
First, clean the crucian carp from scales and gut it. You will be lucky if there is caviar inside the fish. It is very tasty to fry it either separately or in the form of pancakes, adding an egg. In a word, remove the caviar, if any, and set it aside for another recipe.

Step 3

Step 3
Large crucian carp must be cut into pieces with a sharp knife, spread along the spine — this way the pieces will be better fried and browned. Leave small fish whole, the main thing is that they fit in the pan when frying (but I still recommend cutting them into pieces).

Step 4

Step 4
This is what my cut-up portions of crucian carp look like.

Step 5

Step 5
Sprinkle them with lemon juice.

Step 6

Step 6
Salt and pepper the fish.

Step 7

Step 7
And bread the crucian carp in flour. To do this, simply roll the fish in flour on a separate flat plate.

Step 8

Step 8
Fry pieces of crucian carp in a frying pan in hot oil over medium heat on one side until golden brown. Do not leave the stove and make sure that your fish does not burn.

Step 9

Step 9
Then turn the fish over and cook on the other side, adding onion pieces in between. If the crucian carp is even larger than mine, you can keep it under the lid, but then turn it upside down again so that the limp surface under the lid dries out and becomes crispy again.
