Irresistible Homemade Oatmeal Raisin Cookies

Crumbly, tender, soft, a hundred times better than store-bought! Oatmeal raisin cookies turn out incredibly tasty, you won’t be able to tear yourself away from them! It goes perfectly with milk, kefir, fermented baked milk. You can serve it for breakfast with coffee or before bed with tea.

Cinnamon 1 tsp
Wheat flour 200 g
Cereals 250 g

How to bake oatmeal raisin cookies at home so that they are as good, if not tastier, than store-bought ones? Very simple! To begin, prepare the necessary ingredients according to the list. Oatmeal comes in different types depending on the grind. You can use any, but keep in mind that the finer the flakes, the more uniform and soft the finished cookies will be. I took extra flakes, that is, the smallest and softest ones, and additionally rubbed them between my palms, chopping them even more.

Wash the raisins, add hot water and leave for 5-7 minutes. Then drain the water and dry the raisins on a paper towel. Raisins don’t necessarily need to be light; you can make them from any raisins you can buy. But it’s better to take medium-sized raisins; with them the dough will be more homogeneous and will not fall apart.

Beat soft butter at room temperature with sugar until fluffy. Cane or, as it is also called, brown sugar is suitable for any type. I have Demerara. If you donʼt have brown sugar, you can replace it with regular white sugar.

Add oatmeal to bowl with butter. Sift the flour. Also add egg, baking powder and cinnamon.

Mix everything together until you obtain a homogeneous, sticky, slightly crumbly dough. The dough should come together into a ball. If your dough is too crumbly and does not hold its shape when you try to roll it into a ball, you can add 1-2 tbsp. l. melted butter or water.

Add raisins to the dough.

Knead the dough thoroughly with your hands again.

Roll the dough into 15-16 identical walnut-sized balls.

Line a baking sheet with parchment and sprinkle flour on top to prevent the cookies from sticking. Place the dough balls on the baking sheet and flatten them slightly with your fingers, giving the cookies a round shape. Bake oatmeal cookies for 20-25 minutes in an oven preheated to 180°C until golden brown. The exact time depends on your oven and the size of the cookies. Therefore, constantly check your baked goods for doneness. Bon appetit!
