Delicious, quick, made from simple ingredients, for the whole family! Galette cookies with sunflower and sesame seeds are great for a quick snack on the road, at work or for a walk. This is a good snack to go with beer. In addition to seeds, you can add any nuts and flax seeds to it.

Basic:

Salt 1 tsp
Sugar 1 tbsp
Wheat flour 250 g
Butter 50 g
Water (hot) 100 ml
Eggs 1 pc
Vegetable oil 50 ml
Baking powder 1 tsp
Sesame 50 g
Starch 50 g
Sunflower seeds 50 g

How to make cookies with seeds? Prepare all the necessary ingredients. Take any refined vegetable oil. Creamy can be replaced with vegetable. Use premium or first grade flour. I used white sesame, but you can use black or a combination of both types. Instead of sugar, you can use a sweetener that is not afraid of heat treatment.

Take a deep bowl in which it is convenient to knead the dough. Pour hot water into it, add salt and sugar and stir until they dissolve.

Then add vegetable and butter, mix. It is better to take the butter out of the refrigerator in advance so that it becomes softer. If you havenʼt done this, just cut it into small pieces and then add it to the dough. Add starch and mix everything thoroughly. Starch will make the cookies crispier.

Sift most of the flour into a separate container. Add the baking powder and mix well to distribute it evenly throughout the flour. The flour needs to be sifted to remove any small debris, if any, and to oxygenate the dough for a more airy dough. Add flour in small portions and continue kneading the dough.

When it becomes difficult to mix with a whisk or spoon, start doing it with your hands, adding flour until you get the desired consistency. Remember that you may need a little less or more flour than indicated, it depends on its properties. Read more about flour in the separate article at the end of this recipe.

The dough should be tender and soft, but not stick to your hands. Divide the dough into 2 parts. Turn on the oven to preheat to 180 degrees on top-bottom mode.

Roll out one half on non-stick parchment into a rectangular layer no more than 4 mm thick. If you are not sure about the non-stick properties of parchment, grease it with vegetable oil. Trim off any jagged edges and add them to the second portion of dough.

Wash the egg, dry with a towel and beat with a fork or whisk. Spread half the beaten egg evenly over the rolled out dough.

Distribute sesame seeds and seeds over the rolled out dough. Press them slightly into the dough by rolling them with a rolling pin. Cut into squares with a curly or regular knife. Make the size as you wish. Mine is approximately 8x8 cm. A standard large baking sheet from your oven will be suitable for baking. Transfer the parchment with the dough onto it. Place in an oven preheated to 180 degrees and bake until lightly browned, about 15 minutes. Read about the operation of ovens below the steps.
