How to make egg and cheese sandwiches in a frying pan? Prepare your food. Any bread will do — white, black, whole grain. It is better to prepare such sandwiches from a square toast, but it will work with a regular loaf. In addition to tomatoes, you can take bell pepper. Any greens will do, I used green onions.

If the bread is not sliced, cut it into slices about 1cm thick. Cut out a crumb of any shape in the center. You can use a circle, you can use a square. I first marked the circle with a glass, then cut it out with a knife.

Grate the cheese on a medium grater. Cut the cherry tomatoes into halves; if you have a regular tomato, then cut it into cubes.

Heat a frying pan over medium heat. It is better if it has a non-stick coating — then the egg will definitely not stick. Pour vegetable oil on it and put a piece of butter — this way it won’t burn, and the bread will turn out tastier. The links at the end of the recipe will help you choose oil and frying pan. Place the bread with the hole in it in the oil. Fry it on one side, then flip it over to the other. The bread will brown.

Gently crack the egg into the hole, being careful not to break the yolk. Place a piece of tomato into the still raw egg. Sprinkle the bread with grated cheese. You can add a lot of cheese or take a slice and cover the entire sandwich. I like the open yolk better; I sprinkle the cheese just around it.

Reduce heat to low. Fry the sandwich until the white is ready. If you like a runny yolk, then do not cover the pan with a lid, or cover it for literally 1 minute. If you like fried eggs, you can flip the sandwich over and fry it on both sides. I prefer a runny yolk, so I cook these sandwiches only until the white is ready.
