Cinnamon 1 tsp
Wheat flour 300 g
Butter 200 g
Baking powder 0.5 tsp
Chicken eggs 1 pc
Cottage cheese (any fat content) 500 g

How to make cottage cheese envelopes with sugar? Prepare all the necessary products. Place cottage cheese in a deep bowl. If the cottage cheese is grainy, it is better to grind it through a sieve or grind it with an immersion blender. Beat a chicken egg into the cottage cheese, add sugar, a pinch of salt and vanillin. Using a blender, beat all the products together until you obtain a homogeneous curd mass. Wash the egg with baking soda first, as there may be harmful bacteria on its surface.

Add butter softened at room temperature. If desired, butter can be replaced with margarine, this may affect the taste, the choice is yours. Beat the mixture again with a blender until it becomes homogeneous.

Add baking powder to the bowl with the curd mass and gradually add the wheat flour sifted through a sieve. Knead the dough with a spoon; when it begins to come together, turn the dough out onto a floured work surface and continue kneading the dough, adding a little flour if necessary. Flour from different manufacturers may have different properties, so you may need less or more of it.

There is no need to knead the dough for a long time so that the cookies do not turn out hard and tight. Wrap the dough in cling film and put it in the refrigerator for half an hour to rest.

After the specified time, remove the dough from the refrigerator and roll it into a thin layer about 0.3 centimeters thick.

Using a glass or a special cookie cutter, cut out circles from the dough.

Pour sugar and cinnamon into a plate and stir. If you donʼt like cinnamon, you can omit it, or replace it with cocoa powder. It will turn out delicious in any case. Take a circle of dough and roll one side in the resulting sugar mixture. Fold the circle of sprinkles in half (sugar inside) and dip one side of the cookie in the sugar. Fold the sugar inward again. Dip the future top of the cookie into sugar. Do this with each circle.

Place the curd dough pieces on a greased baking sheet (you can line it with parchment paper). And place it in an oven preheated to 180 degrees. Bake cookies for about 25 minutes. The times indicated are approximate, use your oven as a guide. Remove the cookies from the baking sheet, let cool slightly and serve with hot aromatic tea, coffee or cocoa. Enjoy your tea!
