Before cooking squids, they must be cleaned. Peel off the (pink) skin of the squid. And under it there is another thin transparent film (because of it the squid turns out to be somewhat harsh). The easiest way to do this is in hot water; it curls up and is removed without effort. We also remove all the insides and transparent seals in the nose of the carcass.

Next is the most important thing! Cook the squid correctly. Squids tend to shrink in size when cooked for more than 3 minutes and turn into tight “rubber.” You can cook squid by dipping it in boiling salted water for just 30 seconds. During this time, the squid will be cooked and will hardly lose any size. However, if you accidentally overcook the squid, cook it for a total of 20 minutes — then the squid will return to softness, although it will decrease in size by almost 2 times.
