Tomato Paste and Flour Gravy

Basic:

Salt 0.5 tsp
Sugar 1 tsp
Wheat flour 2 tbsp
Water 400 ml
Bay leaf 1 pc
Tomato paste 60 g
Bulb onions 1 pc
Vegetable oil 1 tbsp
Basil 0.5 tsp
Herbal mixture (Provençal (0.5 tsp.) to taste

How to make gravy with flour and tomato paste? Prepare the necessary ingredients. Take odorless vegetable oil.

Wash the pre-peeled onions and cut into small cubes.

Heat vegetable oil slightly in a frying pan and add chopped onion. Fry the onion over moderate heat, stirring occasionally, until golden brown.

Add tomato paste to the pan with the onions and stir.

Fry the onion with tomato paste, stirring, for 1-2 minutes.

Dilute the flour in a small amount of cold water, grind until the lumps of flour completely disappear. This is much easier to do in a small volume of liquid.

Add diluted flour to the pan and stir.

Gradually pour in the rest of the water, while vigorously stirring the mixture. Increase the heat until the gravy comes to a boil. Add salt and sugar. Add dry seasonings and spices, being guided by your taste and desire. I used herbs de Provence and dried basil. Add bay leaf to the gravy and mix well. Cover the pan with a lid and cook the gravy at moderate boil for 10-12 minutes, stirring occasionally.

Then reduce the heat to low and simmer the gravy under the lid closed for about 10 minutes. During this time, the gravy will change color to a more saturated one and thicken a little. Seasonings and spices will reveal their taste and add aroma. With the specified proportions of flour and water, the gravy is of medium thickness. By increasing or decreasing the amount of water, the density can be adjusted up or down. Remove the bay leaf from the finished gravy.
