How to make tomato juice at home from tomatoes? Prepare the necessary ingredients. Tomatoes for juice should be selected when they are ripe; it is better if the variety is juicy.

Wash the tomatoes and cut into four parts. Cut out the stem and spoiled areas. I will run the tomatoes through a new generation juicer, so there is no need to remove the skin, the juice will come out very clean. If you use a meat grinder, blender or old juicers, then the skin must be removed. To do this, cut the top of the tomato with a cross, place the fruit in boiling water in a colander for a minute and immediately transfer it to cold water. The skin will peel off easily.

Pass the prepared tomatoes through a juicer or other chopping device and squeeze out the juice.

From 1.5 kg of juicy tomatoes I got 1 liter of raw juice. The amount of juice may vary slightly, it all depends on the tomatoes themselves. From 1 liter of raw juice you get almost 800 ml of ready-made juice.

Pour the raw juice into a spacious container, as foam will rise when boiling. Start heating on low, then increase to medium-high and bring to a boil. At the moment of boiling, reduce the heat to minimum. Cook, stirring constantly, so that the juice heats evenly and does not burn.

The foam will gradually settle and disappear.

Add salt and sugar to taste to almost pure, boiled juice, stir and let simmer for 5 minutes. You donʼt need to add sugar, itʼs a matter of taste. But a small amount of sugar balances the taste of the sour juice, for the sake of experiment you can try it in a glass, if you like it, you can prepare the whole volume this way. But it’s definitely better to add pepper when serving, this is purely an acquired taste, children refuse to drink pepper, even without salt at all.

Then pour the homemade tomato juice from the tomato into a jar and let cool, uncovered. Place the cooled juice in the refrigerator. The juice should be shaken before drinking. Hot juice can be used for the winter. Then pour it into sterilized jars and immediately screw it on with sterile lids, turn it over and leave it to cool, covered with a blanket.
